Feelin’ Fresh Brekkie
This salsa was insipred by a free hello fresh recipe I got!
Serves 1

Ingredients
Salsa
8-10 cherry tomatoes, halved
1 scallion, thinly sliced (whites and greens)
1/2 Jalapeño, halved then thinly sliced
A sprinkling of cilantro
Flaky salt (or kosher)
Fresh black pepper
Brekkie
Shredded cheddar
2 eggs, cooked as you like (over easy for me!)
Instructions
Layer tomatoes into a bowl, cut sides up. Sprinkle generously with flaky salt and ground pepper.
Layer on jalapeno, green onion, and cilantro.
Layer with shredded cheddar cheese (as much as you'd like).
Cook eggs to your liking, and put right on top.
Finish with a touch of salt and pep.
Notes
This would be good with a side of torts or crunchy bread (if your eggs are runny)
