Ingredients

  • Croutons

  • Old crunchy bread, cubed (sourdough, baguette, etc.)

  • Olive Oil

  • Salt/Pepper/Garlic Pow/Red Chile Flakes/Whatever you want here

  • Salad

  • Romaine hearts or little gems, torn

  • Cucumber, sliced

  • Feta, crumbled

  • Chicken Breast, diced

  • Kalmata Olives

  • Orzo, cooked with salt

  • Lemon Vinaigrette

  • Fresh Black Pepper, ground

  • Chopped Calabrian Peppers, if you like spice *optional

Instructions

  1. Heat oven to 400°

  2. While oven is pre-heating, cut up your old bread into approx. 1/3" cubes (careful if its getting stale!).

  3. Toss bread in bowl with 1-2 T. of olive oil and any desired seasonings. I like garlic pow, salt, paprika.

  4. Bake until crispy and let cool completely (but make sure to snack on a few while they are warm).

  5. Assemble salad. Put a base of lettuce in your bowl and top with dressing. Toss to combine. Layer on cucumbers, chicken, orzo, feta, olives. Top with croutons and peppers if desired! Add lots of black pep!
