Green Chile Savory Pancakes

I use kodiak cakes for this recipe, but you could start with any pancake base.

Makes 3-4 small pancakes.

Ingredients

  • 1/2 c. Kodiak Cake Buttermilk Mix

  • 1/2-3/4 c. water or milk.

  • 1/3 c. shredded cheddar (this one is a level up)

  • 1 medium/large hatch green chile, diced

  • 2 scallions, sliced thin

  • 1 T. butter

Instructions

  1. Mix your pancake batter, then add in all other ingredients.

  2. Moving in batches (depending on your pan size), heat butter in a non-stick skillet. Cook pancakes according to directions. They may take a little bit longer to cook through because of the added ingredients.

Notes


Christian had the idea to top with a fried egg and crumbled bacon (or to make a pancake sandwich). This would be soooo good.
