Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 2/3 cup oil
  • 1 cup flour
  • 1 t baking soda
  • 1 t baking powder
  • 1 t cinnamon
  • 1/2 tsp. salt
  • 1/2 cup grated carrots
  • 1/2 cup crushed pineapple
  • 1/2 cup nuts
  • Frosting
  • 11 oz. cream cheese
  • 1/2 stick (1/4 c.) butter
  • 1 t vanilla
  • 1 3/4 cup powdered sugar

Instructions

  1. Cake – Blend eggs, sugar and oil with mixer
  2. Mix dry ingredients
  3. Add to mixture and Blend
  4. Add carrots pineapple and nuts and stir by hand 
  5. Bake at 350° for 30 to 35 minutes
  6. Frosting – Blend well
