Oatmeal Chocolate Chip Cookies

Ingredients
- 1 C. Shortening
- 3/4 C. Brown Sugar
- 3/4 C. White Sugar
- 2 Eggs
- 1 t. Vanilla
- 1 t. Baking Soda in 1 t. Hot Water
- 1 t. Salt
- 1 1/2 C. Flour
- 2 C. Oatmeal (Old Fashioned 5 min. type)
- 1 Pkg. Chocolate Chips (or less)
Instructions
- Beat first 5 ingredients together with an electric mixer until well blended.
- Stir in soda and water.
- Gradually stir in flour, then oats, then chips.
- (I usually form into 3 rolls, wrap in Saran and refrigerate overnight)
- Bake at 350 for about 10 min.
- (They can be baked 'til crisp but are extra nice when a bit chewy in the middle)
