Ingredients

  • 1 lb English peas, shelled
  • 1 tsp tarragon, chopped
  • 2 shallots, roughly chopped
  • 2 oz cold butter
  • 1 tsp chives, finely sliced
  • 2 tsp lemon thyme compound butter (combine 4 oz butter with 1 1/2 tsp lemon zest, 1 1/2 tsp chopped thyme, and 1/4 tsp salt)
  • salt and pepper

Instructions

  1. Blanch the peas in salted water till just tender. Strain.
  2. Toss peas in butter, tarragon, lemon thyme butter, salt, and pepper.
