Ingredients

  • 1 2/3 c. sugar
  • 2 eggs
  • 1/2 c. unsweetened applesauce
  • 2 T. canola or veggie oil
  • 2 t. vanilla
  • 2 c. flour
  • 2 t. cinnamon
  • 3/4 t. salt
  • 6 c. chopped peeled tart apples (about 3 medium)
  • 1/2 c. chopped pecans
  • Frosting
  • 4 oz. reduced-fat cream cheese
  • 2 T. butter (no substitutes), softened
  • 1 t. vanilla
  • 1 c. powdered sugar

Instructions

  1. Mix sugar, eggs, applesauce, oil, and vanilla.
  2. Beat for 2 minutes on medium speed.
  3. Combine dry ingredients; add to applesauce mixture and beat to combine.
  4. Fold in apples and pecans.
  5. Coat 13x9 pan with Pam.
  6. Bake at 350 for 35-40 minutes or until top in golden brown and toothpick comes out clean.
  7. Cool on wire rack.
  8. For frosting, combine cream cheese, butter and vanilla until smooth.
  9. Gradually add powdered sugar (mixture will be soft).
  10. Spread over cooled cake.
