Caramel Apple Cake

Ingredients
- Cake:
- 1 c. brown sugar
- 1 c. sugar
- 1 1/2 c. oil
- 3 eggs
- 3 c. flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 5 apples (peeled and sliced),
- 1 1/5 c. pecans
- 2 1/4 tsp vanilla
- Glaze:
- 4 T. butter
- 1/4 c. sugar
- 1/4 c. brown sugar
- 1/2 heavy cream
- pinch of salt
Instructions
- Preheat 325 degrees
- Beat together both sugars with the oil.
- Add eggs and stir.
- In a separate bowl, sift together flour, baking soda, cinnamon, nutmeg, salt, then add this all to the egg mixture.
- Stir in apples (peeled and sliced), pecans, vanilla.
- Pour in buttered and floured 9x13 pan.
- Bake 50-75 minutes (mine was done after 50 minutes).
- Glaze:
- While the cake is cooling, melt butter over low heat, stir in sugar, brown sugar, pinch of salt.
- Cook over medium-low heat for 2 minutes
- Add heavy cream and boil for 2 minutes, stirring constantly
- Poke holes in cake and pour on the glaze.
- Serve warm or room temp.
