Ingredients

  • 1 c. sugar
  • 1/3 c. oil
  • 1/3 c. apple sauce (if no applesauce just double oil)
  • 2 eggs, beaten
  • 1 1/2 c. flour
  • 1 t. soda
  • 2 t. baking powder
  • 1 t. cinnamon
  • 1/2 t. salt
  • 1 t. vanilla
  • 1-2 c. grated carrots
  • 1 c. crushed pineapple, drained

Instructions

  1. Mix sugar, oil, apple sauce, eggs (and optional: add juice from pineapples for even moister muffins).
  2. In another bowl,combine dry ingredients; mix well.
  3. Add dry ingredients to the sugar and oil mixture; stir to moisten.
  4. Add vanilla, carrots, and pineapple.
  5. Spoon into greased muffin cups; bake at 375 for 20+ minutes.
  6. Makes 12 muffins
