Ingredients

  • 1 Lb. ground beef (or) lean ground turkey
  • 1 Can diced tomatoes (16 oz.)
  • 2 Medium onions, chopped
  • 2 Stalks celery, sliced
  • 2 Medium carrots, sliced
  • 1/3 c. pearl barley
  • 1/4 c. catsup
  • 1 T. beef bouillon base (or less)
  • 1 t. dried basil
  • 1 bay leaf
  • 5 c. water

Instructions

  1. Brown meat (drain fat).
  2. Stir in remaining ingredients.
  3. Bring to boil and simmer for 1 hour.
  4. Remove bay leaf and season with salt and pepper.

Notes


Melinda's variation: i made a double batch so it was 2/3 cup of pearl barley and 1/3 cup of lentils. Dried lentils and barley just rinsed before putting in soup. 1/1/2015

    I didn’t want to make a special trip to the market for pearl barley so I used Hull less barley. I pre-cooked it and I added it at the last minute just before serving.
