Ingredients

  • 2 T sherry vinegar (may substitute white wine vinegar)
  • 1 t. shallot, finely minced
  • 1 t. dijon mustard
  • 1/4 t. salt
  • 1/8 t. pepper
  • 1 t. honey
  • 6-7 T. safflower oil or other mild olive oil (mild flavored oil)

Instructions

  1. Combine all ingredients in a canning jar.
  2. Shake well before serving.
  3. Refrigerate and use as needed.
