Ingredients

  • 2 eggs
  • 1 c. sugar
  • 1 c. flour
  • 1 t. baking powder
  • pinch of salt
  • 1/2 c. milk, scalded
  • 2 T. butter

Instructions

  1. Beat eggs together until thick.
  2. Add sugar to eggs and beat hard.
  3. Add flour, baking powder and salt.
  4. Scald milk with 2 T. butter.
  5. Stir hot milk into cake.
  6. Bake in greased pan for 30 minutes (maybe less).
  7. Topping:
  8. 6 T. brown sugar
  9. 4 T. cream
  10. 4 T. butter, melted
  11. 1 c. coconut
  12. Mix together and spread on top of cake.
  13. Place under broiler until toasted and fluffed.
