Lemon Cream Pie

Ingredients
- Combine, cook until smooth and clear:
- 1 1/4 c. sugar
- 4 1/2 T. cornstarch (Olive adds some flour too and a pinch of salt)
- 1 1/2 c. water
- 1/4 c. lemon juice and grated rind
Instructions
- Beat 3 egg yolks and 1 1/2 T. butter.
- Cool and beat.
- Take the egg whites and beat a little; then add 1/4 t. cream of tartar.
- Beat again and add 4 T. sugar (one at a time).
- Beat until stiff and pour over cooked filling in baked crust.
- Combine, cook until smooth and clear:
