Ingredients

  • Combine, cook until smooth and clear:
  • 1 1/4 c. sugar
  • 4 1/2 T. cornstarch (Olive adds some flour too and a pinch of salt)
  • 1 1/2 c. water
  • 1/4 c. lemon juice and grated rind

Instructions

  1. Beat 3 egg yolks and 1 1/2 T. butter.
  2. Cool and beat.
  3. Take the egg whites and beat a little; then add 1/4 t. cream of tartar.
  4. Beat again and add 4 T. sugar (one at a time).
  5. Beat until stiff and pour over cooked filling in baked crust.
