Ingredients

  • 9 large Yukon gold potatoes (6 to 6 1/2 lbs.) peeled and cut into large chunks 1 c. sour cream
  • 8 oz. cream cheese, room temperature
  • 8 T (1 stick) butter, room temperature
  • 1/2 c. milk 3 t. onion
  • salt salt and pepper

Instructions

  1. Lightly butter 9 x 14 oval baking dish.
  2. Place potatoes in large saucepan and cover with cold water.
  3. Boil until tender, about 30 minutes.
  4. Drain.
  5. Using electric mixer and/or potato masher, mash potatoes in a large bowl.
  6. Mix in sour cream, cream cheese, 5 T butter, milk, onion, salt and season with salt and pepper.
  7. Transfer potatoes to prepare dish (can be prepared 2 days ahead.
  8. Cover and refrigerate.
  9. Preheat oven to 400.
  10. Slice remaining 3 T butter and place on top of potatoes.
  11. Bake until heated through and light brown, about 30 minutes.
