Ingredients

  • 8-10 medium-sized potatoes (skin/sliced up)
  • 1/2 c. milk
  • 1 c. sour cream
  • 1 8-0z cream cheese, softened
  • 4 T. butter (+ add'l for top when finished)
  • 3/4 c. chopped chives
  • salt and pepper to taste
  • paprika

Instructions

  1. Peel and boil potatoes until tender.
  2. Beat sour cream and softened cheese together.
  3. Add hot potatoes and beat until smooth.
  4. Add butter, chives, salt, pepper to taste, milk as needed to make it creamier.
  5. Place in greased 2-quarte casserole.
  6. Dot with additional butter and sprinkle paprika on top.
  7. Bake at 350 for 25 minutes.
  8. "Great with gravy"
