Ingredients

  • 1/2 c. Parmesan
  • 1. c Italian bread crumbs
  • 1 cube butter, melted *(or egg whites for a healthier alternative)
  • chicken thighs (I use boneless, skinless)

Instructions

  1. Line pyrex with foil for easy clean up.
  2. Mix parm and bread crumbs.
  3. Dip thigh in butter and coat with mixture.
  4. Bake 350-375 uncovered for 30 minutes

Mary Ann's 2019 Note: I just made this and it only took 30 minutes with skinless boneless thighs.
Mary Ann uses egg whites to make the bread crumbs stick. I will try this too. Would be great to cut out all that butter especially since I usually make corn pudding as a side dish and that uses a lot of butter too.
