Ingredients

  • 10 oz frozen spinach
  • 4 eggs or egg substitute
  • 1 c. ricotta
  • 3/4 c. fresh grated parmesan
  • 3/4 c. chopped portobellos
  • 3/4 c. scallions
  • 1/4 t. Italian seasoning
  • salt and pepper to taste

Instructions

  1. Thaw and squeeze spinach thoroughly.
  2. Mix all ingredients in a large bow.
  3. Spray a 9? pie plate and fill with mixture
  4. Bake at 375 for 30 minutes. Let cook 20 minutes.
