Ingredients

  • 1 8 oz. package of uncooked spinach noodles (or the multi colored ones)
  • 4 oz. cooked ham slices (2" x 1/1/4" strips)
  • 1 small red onion
  • 4 c. fresh spinach (cut into 3" x 1 1/4" strips)
  • 4 oz. mozzarella cheese (2" x 1/4" strips)
  • Dressing:
  • 1/4 c. white wine vinegar
  • 1 T. lemon juice
  • 1 T. water
  • 1 T olive oil
  • 1/4 c. chopped fresh basil
  • 2 minced cloves garlic
  • 1/4 t. salt and pepper (each)

Instructions

  1. Cook noodles al dente. Drain and pour over spinach. Combine dressing and shake. Pour dressing over noodles, spinach and remaining ingredients. Toss and serve.
