Ingredients

  • 3 c. AP flour

  • 4 t. baking powder

  • 1/2 t. salt

  • 3/4 c. coconut milk

  • 1/4 c. melted butter

  • 1/4 - 1/2 c. cream of coconut

Instructions

  1. Mix the dry ingredients together in a large bowl.

  2. Add coconut milk, melted butter, cream of coconut (starting with 1/4 cup and increase as needed).

  3. Mix together and knead to form a smooth ball of dough.

  4. Separate dough into golf-ball sized pieces. Roll out on floured surface until about 1/8-inch thick.

  5. Place on dry skillet, prick to prevent bubbling.

  6. Pan fry over medium low heat for about 3-4 minutes per side.

  7. Set aside and cover with clean towel until ready to serve.
