Ingredients

  • 2 cups cooked quinoa

  • 1 cup sauteed veggies, chopped finely

  • Broccoli

  • Zucchini/Yellow Squash

  • Onion/Shallot

  • Garlic

  • Parmesan Cheese

  • Breadcrumbs

  • 2 Eggs

  • Cooking Oil

Instructions

  1. Cook quinoa according to package (2/3 dried, 2:1 water:quinoa).

  2. Finely chop selected veggies and saute them in a tbsp-ish of olive oil

  3. To a large mixing bowl, add cooked quinoa and sauteed veggies. Let cool a bit.

  4. Once cooled, add your eggs, breadcrumbs, and parmesan cheese. Mix it up!

  5. Heat 1 tbsp olive oil in a skillet. Using your hands or a scooper, get about 1/4 cup of the quinoa mixture, roll into a ball, squish into a patty shape, plop into hot skillet. Repeat for as many as will fit in your skillet. Don't crowd em'.

  6. After about 2-3 minutes flip them. They should be crispy and brown!

  7. Repeat steps 6-7 as needed for the rest of the mixture, replenishing oil between batches as needed.
