Ingredients

  • Cake:
  • 1 c. brown sugar
  • 1 c. sugar
  • 1 1/2 c. oil
  • 3 eggs
  • 3 c. flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 5 apples (peeled and sliced),
  • 1 1/5 c. pecans
  • 2 1/4 tsp vanilla
  • Glaze:
  • 4 T. butter
  • 1/4 c. sugar
  • 1/4 c. brown sugar
  • 1/2 heavy cream
  • pinch of salt

Instructions

  1. Preheat 325 degrees
  2. Beat together both sugars with the oil.
  3. Add eggs and stir.
  4. In a separate bowl, sift together flour, baking soda, cinnamon, nutmeg, salt, then add this all to the egg mixture.
  5. Stir in apples (peeled and sliced), pecans, vanilla.
  6. Pour in buttered and floured 9x13 pan.
  7. Bake 50-75 minutes (mine was done after 50 minutes).
  8. Glaze:
  9. While the cake is cooling, melt butter over low heat, stir in sugar, brown sugar, pinch of salt.
  10. Cook over medium-low heat for 2 minutes
  11. Add heavy cream and boil for 2 minutes, stirring constantly
  12. Poke holes in cake and pour on the glaze.
  13. Serve warm or room temp.
