Caramelized Kimchi Potato Bites
This recipe was inspired by the Kimchi fries at Chi’lantro in Austin, TX. Made them as a Super Bowl/football watching snack.

Ingredients
Potatoes
2 Russet potatoes, peeled
2 t. Garlic Powder
2 t. Momofuku spicy salt
2 t. Paprika
1 t. MSG
1 t. Black Pepper
Sauce
2 T. Gochugang
3 T. Mayo (Kewpie preferred)
1 T. Lime
2 t. Honey (or any sweetener)
Toppings
4 slices thick cut bacon
1/2 cup Kimchi, roughly chopped
2 Scalliions, sliced
4 T. Cilantro, roughly chopped or floofed
1/2 cup Cheddar cheese, shredded
1/2 cup Monterey Jack cheese, shredded
Black Sesame Seeds
Instructions
Slice your potatoes in 1/3" slices. Cook them according to the cripsy crunchy oven baked fry using the spices listed in this recipe (before baking).
While the fries cook, cut your bacon slices into 4 even pieces and cook them to your preferred doneness (team floppy over here). Once done, set aside. Reseerve that bacon fat
Into a small skillet, add about a tablespoon of the reserved bacon grease and heat it over medium heat. Once hot, add your chopped kimchi. Toss to mix it with the oil then let it carmelize over mediuim heat. Stirring very occasionaly. It should start to get cripsy and delicious - with some good color on it. When done, take it off heat and set aside.
In the last minutes of your potato bake, top each potato with a sprinkle of cheese, put it back in the oven until melted. Use this time to mix your sauce ingredients. Taste and adjust as preferred.
Take out your poatotes and put them on a platter in a single layer. Add a layer of sauce, then a piece of bacon, and lastly somee careemlized kimchii. Sprinkle with sesamee seeds, cilantro and sliced scallions. Serve hot.
