Cilantro Ginger Meatballs with Rice
Originally inspired by a hello fresh meal, hence the baked carrots (IYKYK). Cabbage is delicious but optional, I always have some in my fridge leftover so this is a nice way to use it up. Any other veggies would work – use what you have!

Ingredients
- Meatballs
12 oz. ground meat, we use one pack ground impossible meat
1/4 cup panko
2 T. Grated ginger (I get the pre-grated jar for large quantity times like this, though fresh would be great)
2 T. Finely chopped ciltanro
2 t. Soy sauce
1-2 Scallions
- Veggies
2-3 carrots
1/4 small cabbage (optional)
Olive oil or neutral oil
- Sauce
1 T. Mayo
1 T. Greek yogurt or sour cream
1 T. Gochugang
Pinch of gochugaru, or red chili flakes (optional)
Rice, for serving
Instructions
Preheat oven to 425* and prep two baking sheets with parchment.
Slice carrots on the bias (cause we fancy). Toss sliced carrots in a tsp of oil and a pinch of salt (I like momofuku spicy salt). Layer onto one half of a baking sheet.
Repeat the same step above with the cabbage. Put onto baking sheet next to carrots.
Put veggies in the oven for 10 minutes.
To a bowl, add the meat, 1/4 cup panko, 2 T. Grated ginger, 2 T. Finely chopped ciltanro, 2 t. Soy sauce, whites of scallions sliced. Mix well. If your using regular meat you may want to add a pinch of salt.
Roll the mixture into twelve balls. Put them on the second sheet pan.
After the timer goes off for the veg, add the balls into the oven (keep the veggies in there). Set a new timer for 14 minutes.
While everything bakes, make your sauce. Mix 1 T. Mayo, 1 T. Greek yogurt or sour cream, 1 T. Gochugang until homogeneous. Use water to thin to desired consistency.
Serve with meatballs and veggies over rice, topped with sauce and a sprinkle of gochugaru for spice 🌶️
Notes
I like to add some banchans sauce to my veggies in lieu of oil.
