Ingredients

  • 1/2 c. Parmesan
  • 1. c Italian bread crumbs
  • 1 cube butter, melted *(or egg whites for a healthier alternative)
  • chicken thighs (I use boneless, skinless)

Instructions

  1. Line pyrex with foil for easy clean up.
  2. Mix parm and bread crumbs.
  3. Dip thigh in butter and coat with mixture.
  4. Bake 350-375 uncovered for 1 hours.

Mary Ann's 2019 Note: I just made this and it only took 30 minutes with skinless boneless thighs.

    With my new dietary restrictions, I made a dairy-free, gluten free version, and I “juhzsed” it up a little. Here’s what I did:

    – omitted the Parmesan (next time maybe I’ll replace the parm with nutritional yeast for that cheesy flavor.)
    – replaced Italian breadcrumbs with gluten-free Panko breadcrumbs.
    – replaced the butter with dairy free butter. (Soy-free Earth Balance butter to be specific.)

    For juhzs:
    – salted the chicken and let it sit before I dipped and breaded it.
    – Added fresh parsley and fresh garlic to the bread crumb mixture.

    Notes for baking:
    – I covered the tray with foil for the first 40 minutes, so that the garlic and parsley wouldn’t burn. I removed the foil for the last 15 minutes so it gets nice and golden.
