Dirty Chicken
Ingredients
- 1/2 c. Parmesan
- 1. c Italian bread crumbs
- 1 cube butter, melted *(or egg whites for a healthier alternative)
- chicken thighs (I use boneless, skinless)
Instructions
- Line pyrex with foil for easy clean up.
- Mix parm and bread crumbs.
- Dip thigh in butter and coat with mixture.
- Bake 350-375 uncovered for 1 hours.

Mary Ann's 2019 Note: I just made this and it only took 30 minutes with skinless boneless thighs.

With my new dietary restrictions, I made a dairy-free, gluten free version, and I “juhzsed” it up a little. Here’s what I did:
– omitted the Parmesan (next time maybe I’ll replace the parm with nutritional yeast for that cheesy flavor.)
– replaced Italian breadcrumbs with gluten-free Panko breadcrumbs.
– replaced the butter with dairy free butter. (Soy-free Earth Balance butter to be specific.)
For juhzs:
– salted the chicken and let it sit before I dipped and breaded it.
– Added fresh parsley and fresh garlic to the bread crumb mixture.
Notes for baking:
– I covered the tray with foil for the first 40 minutes, so that the garlic and parsley wouldn’t burn. I removed the foil for the last 15 minutes so it gets nice and golden.
