Honey Vinaigrette

Ingredients
- 2 T sherry vinegar (may substitute white wine vinegar)
- 1 t. shallot, finely minced
- 1 t. dijon mustard
- 1/4 t. salt
- 1/8 t. pepper
- 1 t. honey
- 6-7 T. safflower oil or other mild olive oil (mild flavored oil)
Instructions
- Combine all ingredients in a canning jar.
- Shake well before serving.
- Refrigerate and use as needed.
