Ingredients

  • 2 full qts. huckleberries will yield 1 1/2 c. prepared fruit
  • 1/4 c. lemon juice
  • 3 1/2 c. sugar

Instructions

  1. Prepared fruit using an immersion blender or food processor.
  2. process to the consistency you like for jam.
  3. Cook huckleberries till it begins to boil.
  4. Add sugar.
  5. Bring to rolling boil and boil for 3 minutes or a bit longer...as it thickens.
  6. Take off the stove and test using a few drops on a plate, then place in the freezer to see if it will jell as it cools.
  7. If so, it is done.
  8. If not, boil it a little longer and retest.
  9. Makes 6 pints.
  10. Like huckleberry pie, rich in flavor and running consistency.
  11. Yum!
