Ingredients

  • 1 c. dry lentils
  • 1 c. Sliced leeks or chopped onion
  • 2 cloves garlic, minced
  • 1 T. oil
  • 4 c. beef broth
  • 1 can diced tomatoes
  • 1 T. Worcester sauce
  • 1/4 t. thyme or oregano, crushed
  • 1/4 t. pepper
  • 1/8 t. group cumin
  • 1 bay leaf
  • 1/2 c. chopped carrots
  • 1/2 c. chopped celery
  • 1/2 c. fully cooked sausage or ham

Instructions

  1. Rinse lentils.
  2. Saute onions and garlic.
  3. Add all ingredients except carrots, celery, and sausage.
  4. Bring to a boil.
  5. Reduce heat.
  6. Cover and simmer for 15 minutes.
  7. Add carrots and celery.
  8. Return to a boil, reduce heat, and simmer for 15-20 minutes.
  9. Stir in sausage, heat through.
