Ingredients
- Pineapple Vinaigrette
- 1 head romaine, chopped and rinsed well
- 1 english cucumber, sliced or diced
- 1/4 c. cilantro, roughly chopped
- 1/8 c. mint, finely chopped
- 1-2 scallions, sliced
- 2-4 oz. crumbled feta
Instructions
- Adapt and taste to your liking, I love this salad with panko crusted white fish and white rice.
