Make Ahead Mashed Potatoes

Ingredients
- 9 large Yukon gold potatoes (6 to 6 1/2 lbs.) peeled and cut into large chunks 1 c. sour cream
- 8 oz. cream cheese, room temperature
- 8 T (1 stick) butter, room temperature
- 1/2 c. milk 3 t. onion
- salt salt and pepper
Instructions
- Lightly butter 9 x 14 oval baking dish.
- Place potatoes in large saucepan and cover with cold water.
- Boil until tender, about 30 minutes.
- Drain.
- Using electric mixer and/or potato masher, mash potatoes in a large bowl.
- Mix in sour cream, cream cheese, 5 T butter, milk, onion, salt and season with salt and pepper.
- Transfer potatoes to prepare dish (can be prepared 2 days ahead.
- Cover and refrigerate.
- Preheat oven to 400.
- Slice remaining 3 T butter and place on top of potatoes.
- Bake until heated through and light brown, about 30 minutes.
