Ingredients

  • 1 c. sugar
  • 1/2 c. corn syrup
  • 1 3/4 to 2 c. unsalted dry-roasted peanuts
  • 1 t. butter or margarine
  • 1 t. vanilla
  • 1 t. baking soda

Instructions

  1. Generously grease large baking sheet; set aside.
  2. Combine sugar and corn syrup in 2 quart glass measure.
  3. Cook on HI, 4 minutes.
  4. Stir in peanuts with wooden spoon and cook on HI, 4 minutes.
  5. Stir in butter and vanilla and cook on HI 2 1/2 minutes or 1 to 2 minutes on high in microwave.
  6. Add baking soda; stir until mixture is light and foamy.
  7. Pour onto prepared baking sheet.
  8. Spread quickly to edges, using back of wooden spoon.
  9. (As candy cools, stretch to a thin sheet, using palms of hands).
  10. Cool completely before breaking into pieces.
  11. Store in airtight container in cool place.
