Peanut Brittle

Ingredients
- 1 c. sugar
- 1/2 c. corn syrup
- 1 3/4 to 2 c. unsalted dry-roasted peanuts
- 1 t. butter or margarine
- 1 t. vanilla
- 1 t. baking soda
Instructions
- Generously grease large baking sheet; set aside.
- Combine sugar and corn syrup in 2 quart glass measure.
- Cook on HI, 4 minutes.
- Stir in peanuts with wooden spoon and cook on HI, 4 minutes.
- Stir in butter and vanilla and cook on HI 2 1/2 minutes or 1 to 2 minutes on high in microwave.
- Add baking soda; stir until mixture is light and foamy.
- Pour onto prepared baking sheet.
- Spread quickly to edges, using back of wooden spoon.
- (As candy cools, stretch to a thin sheet, using palms of hands).
- Cool completely before breaking into pieces.
- Store in airtight container in cool place.
