Ingredients

  • 1 c. brown sugar
  • 3 T. butter
  • 3 egg yolks
  • 1 1/2 c. white sugar
  • 1/2 c. pineapple juice
  • 1 1/2 c. flour
  • 1 1/2 t. baking powder
  • 3 egg whites, stiffly beaten

Instructions

  1. Melt brown sugar and butter in pan, then cover with pineapple slices.
  2. (Olive's note: ?I have a heavy iron skillet that bakes perfect.?) Then beat 3 eggs and add sugar gradually, beating well.
  3. Add flour and juice alternately.
  4. Add egg whites last.
  5. Pour batter over pineapple slices in pan.
  6. Bake at 350 degrees about one hour or until done.
  7. Turn upside down on plate.
  8. Serve with Dream whip.
