Pineapple Upside Down Cake

Ingredients
- 1 c. brown sugar
- 3 T. butter
- 3 egg yolks
- 1 1/2 c. white sugar
- 1/2 c. pineapple juice
- 1 1/2 c. flour
- 1 1/2 t. baking powder
- 3 egg whites, stiffly beaten
Instructions
- Melt brown sugar and butter in pan, then cover with pineapple slices.
- (Olive's note: ?I have a heavy iron skillet that bakes perfect.?) Then beat 3 eggs and add sugar gradually, beating well.
- Add flour and juice alternately.
- Add egg whites last.
- Pour batter over pineapple slices in pan.
- Bake at 350 degrees about one hour or until done.
- Turn upside down on plate.
- Serve with Dream whip.
