Ingredients

  • Dressing
  • 3 T. Rice Vinegar
  • 2 T. Sesame Oil
  • 1 T. Maple Syrup (or honey for non vegan)
  • 1 T. Tamari (or soy sauce)
  • 1 T. Almond Butter (or Peanut Butter - fresh is best)
  • 1 T. Ginger (I get the pre-sliced/diced one)
  • Juice of 1 lime
  • 1-2 Cloves Garlic
  • 1/4 bunch cilantro, bottom stems trimmed
  • Salad
  • 1/2 Package Soba Noodles
  • Red Cabbaged, thinly sliced
  • 1 Carrot, julienned (I use a veg peeler)
  • 1.2 Jalapeno (more if desired)
  • Herbs (mint, cilantro, basil are my mix)
  • 1/4 c. cashews, toasted
  • 1 T sesame seeds (optional)

Instructions

  1. Add all dressing ingredients to food proccessor, blend until smooth, set aside.
  2. Cook soba noodles according to package, chill in ice bath until ready to use.
  3. While noodles are cooking, prep the veg.
  4. Add noodles and sauce to large bowl. Mix.
  5. Add in veg and mix again.
  6. Top with nuts, sesame seeds, cilantro.

Don't let the igredient list scare you - I usually have it all on hand and it comes together quick.
