Ingredients
- Dressing
- 3 T. Rice Vinegar
- 2 T. Sesame Oil
- 1 T. Maple Syrup (or honey for non vegan)
- 1 T. Tamari (or soy sauce)
- 1 T. Almond Butter (or Peanut Butter - fresh is best)
- 1 T. Ginger (I get the pre-sliced/diced one)
- Juice of 1 lime
- 1-2 Cloves Garlic
- 1/4 bunch cilantro, bottom stems trimmed
- Salad
- 1/2 Package Soba Noodles
- Red Cabbaged, thinly sliced
- 1 Carrot, julienned (I use a veg peeler)
- 1.2 Jalapeno (more if desired)
- Herbs (mint, cilantro, basil are my mix)
- 1/4 c. cashews, toasted
- 1 T sesame seeds (optional)
Instructions
- Add all dressing ingredients to food proccessor, blend until smooth, set aside.
- Cook soba noodles according to package, chill in ice bath until ready to use.
- While noodles are cooking, prep the veg.
- Add noodles and sauce to large bowl. Mix.
- Add in veg and mix again.
- Top with nuts, sesame seeds, cilantro.
Notes
Don't let the igredient list scare you - I usually have it all on hand and it comes together quick.
