Spinach Pasta Salad & Ham Salad Vinagrette

Ingredients
- 1 8 oz. package of uncooked spinach noodles (or the multi colored ones)
- 4 oz. cooked ham slices (2" x 1/1/4" strips)
- 1 small red onion
- 4 c. fresh spinach (cut into 3" x 1 1/4" strips)
- 4 oz. mozzarella cheese (2" x 1/4" strips)
- Dressing:
- 1/4 c. white wine vinegar
- 1 T. lemon juice
- 1 T. water
- 1 T olive oil
- 1/4 c. chopped fresh basil
- 2 minced cloves garlic
- 1/4 t. salt and pepper (each)
Instructions
- Cook noodles al dente. Drain and pour over spinach. Combine dressing and shake. Pour dressing over noodles, spinach and remaining ingredients. Toss and serve.
