Ingredients
3 c. AP flour
4 t. baking powder
1/2 t. salt
3/4 c. coconut milk
1/4 c. melted butter
1/4 - 1/2 c. cream of coconut
Instructions
Mix the dry ingredients together in a large bowl.
Add coconut milk, melted butter, cream of coconut (starting with 1/4 cup and increase as needed).
Mix together and knead to form a smooth ball of dough.
Separate dough into golf-ball sized pieces. Roll out on floured surface until about 1/8-inch thick.
Place on dry skillet, prick to prevent bubbling.
Pan fry over medium low heat for about 3-4 minutes per side.
Set aside and cover with clean towel until ready to serve.
