Warm Brussel Salad

Ingredients
10-12 Brussel sprouts
1-2 T. Olive oil
8-10 smoked whole almonds (or regular will do)
3 dates
1 lemon
Olive oil
salt & pepper
parmesean
Instructions
Preheat oven to 450 degrees.
Slice Brussel sprouts horizontally from top to root, so you have thin ribbons. Toss with 1-2 T. Olive oil and a sprinkle of salt.
Roast on a baking sheet for 20-25 minutes, tossing once halfway. They should be brown and crispy.
Whisk together the zest and juice of a lemon, while slowly drizzling in 2 T. High quality olive oil. Season with salt and pepper.
Roughly chop your almonds and dates (make sure to remove the pit). Toss everything together and too with freshly grated Parmesan.
Notes
We served this alongside salmon and rice. Mmmmmmm. Serves two as a side or one as a main dish.
