Ingredients

  • 1 scant cup warm water
    8 T. meringue powder
    1 tsp. cream of tartar
    5 tsp. light corn syrup
    1 tsp vanilla extract
    2 pounds sifted powdered sugar

Instructions

  1. Mix water and meringue powder until frothy. (About 30 seconds)

  2. Add cream of tartar, corn syrup and vanilla.

  3. Add all sifted powdered sugar. Mix on low for 8 minutes. Icing should have still peaks. Do not overmix.

  4. Transfer frosting to another bowl with an airtight lid.

  5. If doing flood icing, you will thin it down in batches after adding food coloring. See note on Karen's 7 second test.
