Southeast Asian Peanut Dipping Sauce

Ingredients
- 2 t. vegetable oil
- 4 cloves garlic, finely chopped
- 1 small fresh chili pepper, seeded and minced
- 1 c. water
- 1/4 c. soy sauce
- 1/3 c. chunky peanut butter, preferably unsweetened
- 1 t. packed light brown sugar, or to taste
- 3 T. chopped unsalted roated peanuts (optional)
- 1 T. finely chopped fresh mint leaves (optional)
Instructions
- Heat oil in a small saucepan over medium heat.
- Add garlic, chili and cook, stirring, for 5 seconds:
- Add water, soy, PB, sugar, peanuts, and cook, stirring, until thickened, about 4 minutes.
- Remove from heat and stir in mint, if desired.
- Serve warm or at room temperature.
Notes
This sauce will keep, covered and refrigerated, for up to 1 week.
Yield: About 1 2/3 cups.
