Ingredients

  • 2 t. vegetable oil
  • 4 cloves garlic, finely chopped
  • 1 small fresh chili pepper, seeded and minced
  • 1 c. water
  • 1/4 c. soy sauce
  • 1/3 c. chunky peanut butter, preferably unsweetened
  • 1 t. packed light brown sugar, or to taste
  • 3 T. chopped unsalted roated peanuts (optional)
  • 1 T. finely chopped fresh mint leaves (optional)

Instructions

  1. Heat oil in a small saucepan over medium heat.
  2. Add garlic, chili and cook, stirring, for 5 seconds:
  3. Add water, soy, PB, sugar, peanuts, and cook, stirring, until thickened, about 4 minutes.
  4. Remove from heat and stir in mint, if desired.
  5. Serve warm or at room temperature.

Notes


This sauce will keep, covered and refrigerated, for up to 1 week.
Yield: About 1 2/3 cups.
