Ingredients

  • 12 eggs
  • 8-12 oz of heavy cream
  • 4 c. of Gruyere cheese(TJ has a nice selection)
  • 1 c. cheddar
  • Hand full of spinach/or other greens like swiss chard
  • 1 small shallot chopped
  • Dash of nut meg-Very little-less than a 8th of a teaspoon
  • Salt and pepper

Instructions

  1. For a 13x9 baking (glass works best)
  2. Pre- heat oven to 375°F
  3. Mix up the eggs with the cream
  4. Chop your greens and grate cheese (cheddar and gruyere are then mixed together) reserve ~1 cup for topping
  5. Add greens and remaining cheese to the egg mixture.
  6. Add Nutmeg, salt and pepper and stir.
  7. (I let this mixture sit overnight-not necessary)
  8. Spray/butter the baking dish.
  9. Set the pan in a size larger pan that is filled with water so it reaches ½ way up the side of the smaller cooking pan(I used my steel roaster pan)
  10. Pour mixture in the baking dish and gently pop in the oven.
  11. About 10-15 min in, sprinkle on top the remaining cup of cheese.
  12. Bake about 45-60 min until a knife can be inserted and come out clean and the top is a light golden brown.
