Crustless quiche

Ingredients
- 12 eggs
- 8-12 oz of heavy cream
- 4 c. of Gruyere cheese(TJ has a nice selection)
- 1 c. cheddar
- Hand full of spinach/or other greens like swiss chard
- 1 small shallot chopped
- Dash of nut meg-Very little-less than a 8th of a teaspoon
- Salt and pepper
Instructions
- For a 13x9 baking (glass works best)
- Pre- heat oven to 375°F
- Mix up the eggs with the cream
- Chop your greens and grate cheese (cheddar and gruyere are then mixed together) reserve ~1 cup for topping
- Add greens and remaining cheese to the egg mixture.
- Add Nutmeg, salt and pepper and stir.
- (I let this mixture sit overnight-not necessary)
- Spray/butter the baking dish.
- Set the pan in a size larger pan that is filled with water so it reaches ½ way up the side of the smaller cooking pan(I used my steel roaster pan)
- Pour mixture in the baking dish and gently pop in the oven.
- About 10-15 min in, sprinkle on top the remaining cup of cheese.
- Bake about 45-60 min until a knife can be inserted and come out clean and the top is a light golden brown.
