Ingredients

  • 1 very large zucchini or maybe about 6 small ones- chopped coarsley
  • 1-1/2 c. of Mrs Cubbison's stuffing mix
  • 2-3 oz cheddar cheese, hand-shredded
  • 1/4 c. minced red onion
  • 1 1/4 tsp salt
  • 1/4 c. grated Parmessan cheese, divided
  • 2 eggs, hand-beaten
  • tomatoes - tiny/small ones from the garden
  • parsley
  • 1/2-1 c. sour cream
  • 1 T. butter, diced

Instructions

  1. Pre-heat oven to 350.
  2. Cook chopped zucchini for about 15 minutes in boiling water (low).
  3. Drain.
  4. Combine in med.
  5. bowl: zucchini, stuffing, tomatoes, cheese, onion, parsley, salt, most of Parmessan cheese, and beaten eggs.
  6. Add sour cream and stir to mix.
  7. Dot top with butter and add remaining Parmessan.
  8. Bake for 30 minutes
