Ingredients

  • 2 bell peppers (any color), diced
  • 1 onion, diced
  • 1 zucchini, diced
  • 8-12 oz. mushrooms, diced
  • 1/2 c. grated sharp cheddar cheese
  • 2 pint-size containers Egg Beaters
  • olive oil and butter
  • salt and pepper

Instructions

  1. 13x9 inch Pyrex dish sprayed with Pam
  2. Preheat oven to 350 degrees.
  3. In skillet, cook onion in about 1 Tbs.
  4. olive oil and 1 T butter until golden.
  5. Add Mushrooms and cook until lightly browned.
  6. Put mixture in bowl and set aside.
  7. In same pan, saute peppers and zucchini for about 3-5 minutes, or until slightly soft.
  8. Add to other veggies, stir together.
  9. Season with salt and pepper.
  10. Place veggies in Pyrex.
  11. Sprinkle cheese over the top.
  12. Slowly pour both containers of egg over the top.
  13. Bake until puffed up and lightly browned, about 30-40 minutes.
