Ingredients
- 2 bell peppers (any color), diced
- 1 onion, diced
- 1 zucchini, diced
- 8-12 oz. mushrooms, diced
- 1/2 c. grated sharp cheddar cheese
- 2 pint-size containers Egg Beaters
- olive oil and butter
- salt and pepper
Instructions
- 13x9 inch Pyrex dish sprayed with Pam
- Preheat oven to 350 degrees.
- In skillet, cook onion in about 1 Tbs.
- olive oil and 1 T butter until golden.
- Add Mushrooms and cook until lightly browned.
- Put mixture in bowl and set aside.
- In same pan, saute peppers and zucchini for about 3-5 minutes, or until slightly soft.
- Add to other veggies, stir together.
- Season with salt and pepper.
- Place veggies in Pyrex.
- Sprinkle cheese over the top.
- Slowly pour both containers of egg over the top.
- Bake until puffed up and lightly browned, about 30-40 minutes.
