Ingredients

  • 2 large cucumbers, peeled and sliced
  • 1/4 red onion sliced thin, separated
  • 1 stalk celery
  • 3/4 c. seasoned rice vinegar
  • 1/4 c. water
  • 1 T. sugar
  • 1 T. lite soy sauce
  • 1 tsp salt
  • 1 tsp sesame oil
  • 2 T. sesame seeds, toasted until brown
  • Chili powder, I used my Hatch red chili powder, 3 tsp.

Instructions

  1. In a large bowl, stir together rice vinegar, water, sugar, soy sauce, salt, and sesame oil.
  2. Add cucumbers, red onion, celery, tossing to coat, chill 1 hour.
  3. Add sesame seeds before serving.
