Asian Cucumber Salad

Ingredients
- 2 large cucumbers, peeled and sliced
- 1/4 red onion sliced thin, separated
- 1 stalk celery
- 3/4 c. seasoned rice vinegar
- 1/4 c. water
- 1 T. sugar
- 1 T. lite soy sauce
- 1 tsp salt
- 1 tsp sesame oil
- 2 T. sesame seeds, toasted until brown
- Chili powder, I used my Hatch red chili powder, 3 tsp.
Instructions
- In a large bowl, stir together rice vinegar, water, sugar, soy sauce, salt, and sesame oil.
- Add cucumbers, red onion, celery, tossing to coat, chill 1 hour.
- Add sesame seeds before serving.
