Ingredients

  • 1 T. Olive Oil

  • 1/2 large yellow onion, diced

  • 1 lb. Impossible Meat (1 package)

  • 3 cloves garlic, minced

  • 2 T. chili powder (more or less...depending how you like it!)

  • 1 t. Paprika

  • 1 t. Cumin

  • Fresh ground black pepper

  • 1/2 t. salt

  • 1 15 oz can tomato sauce

  • 1 15 oz. can diced tomatoes, and juice

  • 1 15 oz. can chili beans, drained

  • Accouterments

  • Chips

  • Freshly Shredded Cheddar

  • Sour Cream

  • Diced Onion

  • Sliced Jalapenos 

  • Chopped Cilantro

  • Hot Sauce

Instructions

  1. Heat oil in Dutch oven. Add onions and cook until softened and translucent. Add half the salt, stir and cook one minute longer.

  2. Add the "meat", cooking until brown. Add garlic and cook one minute longer.
  3. Add in the spices, and tomato paste. Stir until fragrant, 1-2 minutes.
  4. Add in the tomatoes, tomato sauce, and beans.
  5. Simmer until your ready to eat and serve with cornbread or baked potato - or as is!

Great with corn bread...salad...and milk (or beer, if you are of age and so inclined!)
