Cilantro Dip

Ingredients
- 2 bunches of cilantro (I just chop off the stem ends about an inch up and throw it away. Chop the rest up and throw it in a bowl.)
- 1 can whole corn drained
- 2 diced tomatoes
- 1/2c. chopped green onions
- 1 can drained black eyed peas
- 2 avocados
- Dressing
- 2 T. seasoned rice vinegar
- 2 tsp tabasco sauce
- 1 t. vegetable oil or canola oil
Instructions
- When ready to assemble dip, add 2 avocados peeled and diced
- Mix together and pour dressing over it. Mix well
- This is best when done just a couple of hours ahead of time.
- You can chop everything up the day before but wait a couple hours ahead of serving to put the dressing on.
- Serve it with either Doritos or Tostidos.
