Ingredients

  • 2 bunches of cilantro (I just chop off the stem ends about an inch up and throw it away. Chop the rest up and throw it in a bowl.)
  • 1 can whole corn drained
  • 2 diced tomatoes
  • 1/2c. chopped green onions
  • 1 can drained black eyed peas
  • 2 avocados
  • Dressing
  • 2 T. seasoned rice vinegar
  • 2 tsp tabasco sauce
  • 1 t. vegetable oil or canola oil

Instructions

  1. When ready to assemble dip, add 2 avocados peeled and diced
  2. Mix together and pour dressing over it. Mix well
  3. This is best when done just a couple of hours ahead of time.
  4. You can chop everything up the day before but wait a couple hours ahead of serving to put the dressing on.
  5. Serve it with either Doritos or Tostidos.
