Enchiladas
Quick and easy enchiladas! Roll the tortillas for traditional style enchiladas or layer tortillas (one layer on bottom, filling, then another tortilla layer topped with sauce and cheese) for enchilada casserole style.
Originally a weight watchers recipe using nonfat plain yogurt and low fat cheese.

Ingredients
1 cup plain yogurt
2 cups chicken
1 cup cheese, shredded
1 small can diced chilies or jalapeños
enchilada sauce
8 Corn tortillas
Instructions
Heat oven to 450°
Cook and shred chicken. Then mix yogurt, chicken, chilies, and 1 cup cheese together.
Coat baking dish with enchilada sauce. If making casserole, layer tortillas to cover bottom, pour filling and spread evenly. Now cover with another layer of tortillas. Cover with enchilada sauce and top with the rest of the cheese.
If making traditional enchiladas, heat tortillas in the microwave to soften. Now, place a spoonful or so inside the middle of a tortilla and roll. Place rolled tortillas facing down. Top with enchilada sauce and cheese.
Cover with tin foil and heat in over at 450 for about 20 min. Mostly you're just heating it and melting the cheese.
