Italian Lentil Soup

Ingredients
- 1 c. sliced carrots
- 1/2 c. diced celery
- 1/3 c. chopped onions
- 1 T. olive oil
- 5 c. water
- 4 c. chopped cabbage
- 1 c. dry lentils (rinsed and drained)
- 1 c. tomato puree (or use stewed Italian tomatoes)
- 1 1/2 t. sugar
- 1 1/2 t. salt
- 1/2 t. ground oregano
- 1/3 t. pepper
Instructions
- In soup kettle add vegetables to olive oil and stir for 5 minutes.
- Reduce heat, cover and simmer about 45 minutes.
