Ingredients

  • 1 c. sliced carrots
  • 1/2 c. diced celery
  • 1/3 c. chopped onions
  • 1 T. olive oil
  • 5 c. water
  • 4 c. chopped cabbage
  • 1 c. dry lentils (rinsed and drained)
  • 1 c. tomato puree (or use stewed Italian tomatoes)
  • 1 1/2 t. sugar
  • 1 1/2 t. salt
  • 1/2 t. ground oregano
  • 1/3 t. pepper

Instructions

  1. In soup kettle add vegetables to olive oil and stir for 5 minutes.
  2. Reduce heat, cover and simmer about 45 minutes.
