Ingredients

  • 2 T. vegetable oil
  • 2 t. each: chili powder and ground cumin
  • 1 t. salt
  • 1 lb. flank steak, cut into thin strips
  • (pork or chicken may be substituted?I've even used turkey strips)
  • 1 can (14.5 oz.) Hunt's Diced Tomatoes with Mild Green Chilies
  • 1 each: medium green and red bell pepper and onion, cut into thin strips
  • 10 flour tortillas, fajita size

Instructions

  1. In a 9" x 13" baking dish, combine oil, chili powder, cumin and salt.
  2. Add steak, tomatoes, peppers and onions; mix well.
  3. Bake uncovered in a preheated, 400 degree oven for 25 minutes.
  4. Serve wrapped in warm tortillas.
  5. I have prepared this in the morning, then just popped it in the oven when we're ready.
  6. Easy and yummy!
