Ingredients

  • Cauliflower Filling

  • 1 Head of cauliflower

  • 2 red bell peppers

  • 1 yellow onion

  • 1/2 tsp smoked paprika

  • 1/2 tsp cayenne pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 tsp cumin

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • Olive oil

  •  

  • Corn Salsa

  • 2 stalks raw corn

  • 2 medium tomatoes

  • 1 red onion

  • 1 jalepeno pepper (or more if you're into that)

  • 1/3 cup fresh cilantro

  • Juice of 1 lime

  • Salt to taste

  • Corn tortillas

Instructions

  1. For Cauliflower Filling – Preheat the oven to 450 degrees.

  2. In a small bowl, mix together all the salt and spices.

  3. Chop the cauliflower into bite-size florets. Toss the florets in olive oil, then add in the spice mixture.

  4. Spread evenly on a baking sheet and roast until golden and tender, about 20 minutes.

  5. For Corn Salsa – Slice kernels off the raw corn cob.

  6. Finely chop oninons, tomatoes, and cilantro. Slice jalepenos and remove seeds. Mince into small pieces. 

  7. Mix together with lime juice. Add salt to taste.

  8. Assemble cauliflower filling on a warm corn tortilla and top with the corn salsa. Enjoy!

Notes


In a separate baking dish, I roasted chopped red bell peppers and chopped onions. Toss in olive oil and season with salt, pepper, and cumin.

After roasting, I mixed it in with the cauliflower filling. 

Also, I bought some house-made chipotle cream salsa from Pancho Villa (a Mexican grocery store in San Diego). SO BOMB. Any kind of creamy chipotle sauce is bomb on this.

 

Topped with thinly sliced radishes, shredded cabbage, avocado, cilantro, and salsa.

For an extra-delicious corn salsa, make a couple hours (or a day) ahead. All the flavors will marinade together and taste so yummy!
